Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!

Make sure to knead it as long as it mentions. I thought it was too dry at first so I added more water after only kneading it a minute but then it was too wet so I had to add more flour... made a mess of it! I finally got it right and it is pliable and works well for the craft project I needed it for. The actual baking time really depended on how thick the forms were. I removed some after 40 minutes and others I had to reduce the temp to 275 and bake for another 30 minutes.
