Easy Cheesy Nachos Recipe

Serves/Makes: 4
Ingredients:
1 1/2 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
2 plum tomatoes, seeded and cut into 1/4-inch dice
1/4 cup sliced pickled jalapeno peppers, minced and patted dry
2 scallions (green onions), finely chopped
1 teaspoon ground cumin
40 round tortilla chips
Directions:
Heat oven to 400F.
In a large bowl, combine Monterey Jack and cheddar cheeses, and plum tomatoes, pickled jalapenos, scallions and cumin. Toss to mix.
Arrange tortilla chips on 2 large baking sheets in single layers. Top with cheese mixture, dividing it evenly among chips and mounding in center of each.
Bake until cheese is melted and bubbly, about 5 minutes. Serve immediately while hot.
