Chocolate Amaretti Truffles Recipe

Serves/Makes: 24
Ingredients:
8 ounces sweet or semi-sweet baking chocolate
1/4 cup Amaretto liqueur
2 tablespoons strong coffee
1/4 pound unsalted butter
1 tablespoon vanilla
3/4 cup pulverized cookies, amarettis or vanilla wafers.
1/2 cup cocoa
1/2 cup pulverized instant-coffee crystals
Directions:
In top of double boiler over simmering water, melt chocolate with Amaretto liqueur and coffee. Stir until smooth. Slice butter into pieces and whisk into mixture, one at a time. Add vanilla and pulverized cookies. Mix well.
Set top of double boiler in bowl of ice and water. Beat mixture while chilling. When congealed and firm, form mixture into teaspoon-size balls.
In small bowl, combine cocoa and instant-coffee crystals. Mix well. Roll balls in mixture. Place in miniature paper cups. Cover and refrigerate until firm.
Rum or Grand Marnier may be substituted for Amaretto. May be made ahead and frozen.
