Breakfast Coffee Cake Recipe

Serves/Makes: 6
Ingredients:
1 cup flour
1/4 cup shortening
1 cup sugar
1 cup flour
2 teaspoons baking powder
1 cup milk
***Topping***
1/2 stick of butter, cut into bits
1/4 cup brown sugar
1/4 teaspoon cinnamon
Directions:
Combine first cup of flour and shortening. (Can use a food processor or just cut as for pie crust).
Combine sugar, the second cup of flour, baking powder and milk; add to the first mixture. Mix by hand; do not beat, but combine well.
Pour into a greased and floured 8- or 9-inch cake pan. (If doubling recipe use a 9-by-13-inch pan.)
Scatter bits of butter evenly over top of batter. Mix sugar and cinnamon, and sprinkle over all.
Bake at 375 degrees for 30 minutes. This cake freezes well.
