Butter Cookies With Icing

1 cup unsalted butter, softened
2/3 cup sugar
1 large egg, beaten lightly
1 lemon, grated peel of
2 1/2 cups all-purpose flour
1/2 teaspoon salt
Icing
2 cups sifted confectioners' sugar
1/4 cup lemon juice
directions
Preheat oven to 350 degrees F.
In a bowl with an electric mixer, beat the butter with the sugar until light and fluffy. Beat in the egg and lemon peel until just combined.
In a bowl, sift together the flour and the salt. Add the flour mixture to the butter mixture, a little at a time, and beat until combined well.
Divide the dough in half, wrap in plastic, and chill for 2 hours.
On a lightly floured surface, roll the dough 1/8 to 1/4 inch thick and stamp out desired shapes with cookie cutter.
Transfer to ungreased baking sheets, spacing 1 inch apart, and bake for 7 to 9 minutes or until lightly golden around the edges.
Let cool for 5 minutes on the sheets and transfer to racks to cool completely.
