It may be basic, but it's also delicious! Your choice of cheese is mixed with a homemade white sauce and cooked macaroni and then baked until heated through.


1 pound macaroni pasta
1 1/2 pound Cheddar, Monterey Jack, and/or CoJack cheese, grated
salt and pepper to taste (especially pepper)
Medium White Sauce
2 tablespoons butter or margarine
2 tablespoons flour
2 cups milk, warmed
Cook macaroni according to package instructions. Drain and rinse.
Add cheese to hot white sauce and stir until melted.
Fold cheese sauce into macaroni. Serve immediately or pour mixture in baking dish and heat in oven (350 degrees F), uncovered, for 20 minutes or until heated through.
Medium White Sauce: Melt butter in saucepan over medium heat. Sprinkle flour into butter and stir until paste forms. Cook for 2 minutes. Add warmed milk to paste, stirring vigorously to mix. Cook sauce until thickened. Remove from heat.

Very good and filling. The only thing I changed is, I used butter instead of margerine to make. I am not sure how it tastes with margerine, but it still tasted good.
