Blue Cheese Rigatoni Recipe

Ingredients:
1 teaspoon olive oil
3/4 cup chopped onion
4 cloves garlic -- minced
6 cups fresh spinach leaves -- chopped
1 1/3 cup chopped seeded tomato
1/2 cup chicken broth
8 cups hot cooked rigatoni
1/2 cup crumbled blue cheese
1/4 cup pine nuts -- toasted
Directions:
Heat oil in a large nonstick skillet over medium heat. Add onion, and cook 20 minutes or until golden brown, stirring frequently. Add garlic, and saute 1 minute. Add spinach, tomato, and broth; cook 3 minutes, stirring occasionally.
Combine spinach mixture, pasta, cheese, and pine nuts in a large bowl; toss well to coat. Serve hot.
