Low-Fat Salsa Chicken

ingredients
4 chicken breast halves (4 ounce size), boneless, skinned
non-stick cooking spray
3/4 cup salsa
1/2 cup sliced green onions
1/4 cup grated Parmesan cheese
directions
Place chicken in an 11- x 7-inch baking dish coated with cooking spray.
Spoon salsa evenly over chicken, top with green onions. Sprinkle with cheese.
Cover and bake at 350 degrees F for 30 minutes. Uncover and bake an additional 10 minutes or until chicken is done.
Serve with hot cooked rice or baked potatoes.

The chicken was a little dry. I think baking it the entire time with the salsa on it is probably a better idea.

A good quick go-to meal. I actually assemble it in the morning with the chicken in the salsa so it marinates. Then just bake it when I get home.

Almost too simple to warrant a recipe but it caught my eye and made a nice dinner. I served it with mexican rice and all in all we enjoyed it. I used a good spicy chunky salsa. You could probably do the same with a can of Rotel tomatoes (just drain them bit so it is thicker)

I use lowfat monterrey jack cheese instead of parmesan. We enjoy this recipe. I use a medium spicy salsa but you could use hot or mild and it will work well.
