ingredients
16 large shrimp, peeled, cut in half
1/4 cup butter
1/4 teaspoon seasoned salt
1 tablespoon shallots, finely diced
1 clove garlic, finely diced
1/4 teaspoon dried thyme
1/2 cup dry Sauternes wine
2 whole ripe tomatoes, peeled, diced
hot cooked rice or noodles
directions
Rinse and dry shrimp.
Heat butter in a large skillet and saute shrimp until tails curl and flesh begins to turn pink, 1 to 2 minutes. Season with salt. Add shallots, garlic and thyme. Saute another 1 to 2 minutes and add wine and tomatoes.
Cook shrimp at a slow simmer for 3 to 4 minutes until sauce thickens and shrimp is fully cooked.
Serve over noodles or rice.
