ingredients
6 boneless, skinless chicken breast halves
2 tablespoons butter or margarine
1 package (10 ounce size) baby spinach
2 medium tomatoes, chopped
1 envelope white sauce mix
2 1/4 cups milk
1/2 cup grated Parmesan cheese
directions
Season chicken, if desired, with salt and ground black pepper.
In 12-inch nonstick skillet, melt half the butter over medium-high heat and cook chicken for 8 minutes or until chicken is thoroughly cooked, turning once. Remove chicken from skillet and keep warm.
In same skillet, melt remaining butter over medium-high heat and cook spinach, stirring occasionally, 2 minutes or until spinach begins to wilt.
Stir in tomatoes and cook for 1 minute. Stir in sauce mix blended with milk. Bring to a boil over high heat, stirring constantly. Reduce heat to low and stir in cheese. Simmer for 1 minute.
Pour sauce over chicken and serve, if desired, with hot cooked noodles or rice.
