Chicken Breast Saute with Curry Spices Recipe

Ingredients:
1 1/2 teaspoon ground cumin
1 teaspoon fennel seeds, crushed or ground (optional)
1 1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/2 teaspoon turmeric
1/4 teaspoon ground cinnamon (optional)
Salt and freshly ground black pepper
4 boneless chicken breasts, skin removed, if desired, patted dry
3 tablespoons vegetable oil
1 large onion, chopped
2 large garlic cloves, chopped (optional)
3/4 cup chicken broth

Directions:

Combine spices, 1/2 teaspoon salt, and 1/2 teaspoon ground black pepper in small bowl and mix well. Reserve 2 teaspoons of mixture for sauce. Sprinkle remaining spice mixture over both sides of chicken and rub thoroughly into meat.

Heat oil in large skillet. Add chicken and saute over medium heat, pressing on it occasionally with spatula to flatten it, for 5 minutes on each side, or until no longer pink inside when you cut into its thickest part. Remove with slotted spatula.

Add onion to pan and saute for 7 minutes, or until softened. Add garlic if you like and reserved spice mixture and saute for 1/2 minute. Stir in broth and bring to a boil. Simmer over low heat for 2 minutes. Return chicken to sauce, cover, and heat gently about 3 miriutes, turning once. Taste sauce and adjust seasoning. Serve hot.
