Chicken Breasts With Sun Dried Tomato

ingredients
clay pot for roasting
4 boneless, skinless chicken breast halves
1 cup sun dried tomatoes (not oil packed), cut into julienne strips
1/3 cup coarsely chopped fresh basil
1 can (2 1/4 ounce size) sliced ripe olives, rinsed and drained
1/4 cup wine (red or white), or water
directions
Prepare clay pot. Completely soak the pot in water (lid and bottom) for 15 minutes; drain.
Place chicken breast in clay pot. Place basil, tomatoes and olives on top of chicken. Add optional wine or water.
Cover pot with lid and place in cold oven. Turn oven to 450 degrees F. Bake approximately 30 to 45 minutes, or until chicken juice is no longer pink when centers of the thickest pieces are cut.
