Ingredients:
2 1/2 pounds boneless pork loin roast
salt and pepper
2 tablespoons herbes de Provence
1 tablespoon onion powder
1 tablespoon garlic, minced
1 tablespoon lemon juice
***CHUTNEY***
1 can (16 oz. size) whole cranberry sauce
1/3 cup pine nuts, lightly toasted
1 teaspoon lemon juice
1 teaspoon herbes de Provence
1/4 teaspoon garlic, minced

Directions:

Preheat oven to 450 degrees F.

Pork: Season pork with salt and pepper. Mix herbes de Provence, onion powder, garlic and lemon juice together and rub over pork roast. Place roast in shallow pan in oven and reduce heat to 325 degrees F. Roast 30 minutes per pound until internal temperature reaches 165 degrees F. Remove from oven and let rest for 5 to 10 minutes.

CHUTNEY: Combine all ingredients and stir thoroughly. Serve at room temperature over roast.
