Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.
Tropical Pork With Crispy Sweet Potatoes, Pineapple And Onions

ingredients
2 medium sweet potatoes, peeled, cut in half lengthwise and sliced 1/4-inch thick
1 medium onion, sliced and separated into rings
1 1/2 cup fresh pineapple chunks
1 1/4 pound pork tenderloin
Sauce
4 tablespoons Worcestershire sauce, MIXED WITH
2 teaspoons hot pepper sauce
directions
Set broiler rack about 5 to 6 inches from heat and preheat the broiler.
In a large, well-oiled roasting pan, combine sweet potatoes, onions and pineapple cubes until coated with oil on all sides. Toss with half the sauce. Spread mixture in an even, single layer and place tenderloin in center. Pour remaining sauce over tenderloin.
Place under broiler and cook for 10 minutes. Remove, turn tenderloin and toss sweet potato mixture. Return to broiler and cook 7 minutes, or until an instant-read thermometer reaches 155 degrees F and vegetables are tender.
If meat is not done, give the potatoes another stir and cook until done. If vegetables are underdone, remove meat to rest, stir vegetables and cook until done. (Don't worry if the fruits and vegetables blacken in places; this will add to the flavor.)
Let pork rest for 5 minutes before slicing. Serve with sweet potato-pineapple mixture on the side and additional hot sauce.
