Peeling tomatoes can be a very messy job. Here's a great way to make it easier.
Heat a large pot of water to boiling.
Dip each tomato in the water for about 30 seconds, you will see the skin become wrinkled somewhat. This causes the skin to peel very easily and does not change taste of tomato.
For small tomatoes (like cherry or Roma) put them in a small colander and carefully dip the colander into the boiling water.
For larger tomatoes, use a large slotted spoon or ladle.
Be careful when handling the tomatoes, they will be hot.
Tip: Freeze the peelings and puree them in a blender to make a gravy or garnish for another dish.
