Martini House Eggnog Ice Cream Recipe

Serves/Makes:   2.5 quarts

  

Ingredients:
2 quarts eggnog
20 egg yolks
1 1/2 cup granulated sugar

Directions:

Place eggnog into a saucepan and bring to a simmering stage.

Combine the egg yolks and sugar in a bowl.

Once the eggnog reaches the simmering stage, carefully ladle the eggnog into the yolk mixture while whisking. Once the egg yolk mixture reaches the same temperature as the eggnog, pour the yolk mixture back into the pot and place over medium heat. Use a spatula and slowly stir the mixture ensuring that the spatula touches the bottom of the pot.

When the liquid is cooked thick enough and a coat of eggnog base can be seen on the spatula, take the pot off the heat and strain the mixture into a bowl. Place the bowl on top of an ice water bath and chill.

Pour ice cream base into an ice cream machine and follow the manufacturers instructions.

Note, you may need to halve this recipe to fit into your ice cream maker.
