Ingredients:
2 (8 oz.) Chicken Breast with Tenders Removed
4 Beaten Eggs
1/2 cup White Wine
1/2 cup Chicken Stock
1/4 cup Fresh Lemon Juice
2 tablespoons Butter
1 tablespoon Fresh Chopped Parsley
Salt & White Pepper to taste
1/4 cup Vegetable Oil
1/4 cup Flour

Directions:

Flatten chicken breast. Dip in flour, then in the beaten eggs. Put in pre-heated sauté pan with oil & sauté on both sides. Discard oil and add wine, chicken stock, lemon juice and reduce. Add butter - swirl pan until lightly thickened then sprinkle with chopped parsley and salt & pepper to taste.
