3 pounds peeled and chopped peaches
3/4 cup cider vinegar
1/4 cup fresh lemon juice
1 cup seedless raisins
1/2 cup chopped white onion
1/4 cup slivered preserved ginger
1 tablespoon salt
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
3 pounds sugar
1 bottle liquid fruit pectin
Combine ingredients in a large pot. Cook slowly until desired consistency is reached. Mash slightly before filling hot, sterilized jars. Seal. Process five minutes.
