chick pea flour
water

Directions:

For deep frying, just chick pea flour and water works great: crisp, non-greasy. Lighter if you make it ahead of time (30 minutes or so); the flour will absorb water as it sits, so you'll thin it to an appropriate consistency. Add whatever seasonings suit the food to be fried.
