ingredients

2 cups all-purpose flour
1 cup oat bran
1/2 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon salt, optional
1/2 cup Miracle whip (low fat is fine)
3 egg whites
1/2 cup skim milk
1/3 cup orange juice
1 teaspoon orange rind, grated
1 cup cranberries, coarsely chopped

directions

Preheat oven to 375 degrees; line muffin pans with paper baking cups or coat with nonstick cooking spray. Combine flour, oat bran, brwon sugar, baking powder, baking soda and salt. In a separate bowl, combine salad dressing, egg whites, milk, juice and rind; mix well. Add to flour mixture, stirring just until moistened. Fold in cranberries. Fill prepared muffin cups almost full and bake for 15 to 17 minutes, or until golden brown.

COMMENT:
In the "Preparation" section it says to add baking soda, but above in the "Ingredients" section it doesn't even list baking soda!!!

REVIEW: 3 star recipe rating
This recipe was really easy to make, and didn't take long at all. The muffins came out a little bland, and i would probably add more cranberries next time.
