2 cups all-purpose flour 1 cup oat bran 1/2 cup brown sugar, packed 2 teaspoons baking powder 1/2 teaspoon salt, optional 1/2 cup Miracle whip (low fat is fine) 3 egg whites 1/2 cup skim milk 1/3 cup orange juice 1 teaspoon orange rind, grated 1 cup cranberries, coarsely chopped
Preheat oven to 375 degrees; line muffin pans with paper baking cups or coat with nonstick cooking spray. Combine flour, oat bran, brwon sugar, baking powder, baking soda and salt. In a separate bowl, combine salad dressing, egg whites, milk, juice and rind; mix well. Add to flour mixture, stirring just until moistened. Fold in cranberries. Fill prepared muffin cups almost full and bake for 15 to 17 minutes, or until golden brown.
