Healthier Chocolate Chip Muffins

ingredients
1 1/4 cup quick-cooking rolled oats
1 1/2 cup boiling water
1 1/2 cup all-purpose flour
3/4 cup brown sugar, unpacked
1/4 cup granulated sugar
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 egg whites
1/4 cup canned peaches, drained and pureed in blender
1/4 cup reduced-fat butter or margarine, melted (not fat-free)
1 teaspoon vanilla extract
1/2 cup miniature chocolate chips
directions
Preheat oven to 325 degrees F.
In medium bowl, pour boiling water over rolled oats. Stir and let stand 20 minutes.
In large bowl, combine flour and next 6 ingredients. Set aside.
In small bowl, whisk together egg whites, pureed peaches, butter and vanilla. Add peach mixture to oats and stir until smooth. Add oat mixture to flour mixture and stir until dry ingredients are moistened. Batter will be thick. Fold in chocolate chips.
Spray large muffin tin with non-stick spray and divide batter among cups. Bake 25 minutes or until wooden pick inserted in center comes out clean.
