Thai green curry paste is a versatile and flavorful ingredient that can be used in a variety of dishes. This paste is commonly used in Thai-style curry dishes.

2 fresh green chiles
1 small onion
1 teaspoon ground coriander
1 tablespoon fresh lime juice
2 teaspoons grated lime zest
1 stalk lemongrass, tough outer layers removed
1 clove garlic, peeled and chopped
1 teaspoon soy sauce
1 teaspoon ground cumin
1/4 cup fresh cilantro, stalks & leaves
1 tablespoon grated fresh ginger
2 tablespoons vegetable oil
Remove the stems and seeds from the chiles. Peel and coarsely chop the onion. Add the chiles, onion, and remaining ingredients to a food processor. Process until smooth.
Use immediately or store in an airtight container in the refrigerator for up to 2 weeks. Use in any recipe calling for Thai green curry paste or sauce.
