Easy Figgy Pastries Recipe

Serves/Makes: 1 dozen
Ingredients:
8 ounces puff pastry
8 ounces cream cheese
1 egg
3 tablespoons sugar
1 1/2 teaspoon each, almond and vanilla extract
1 pound ripe figs
1 1/4 cup honey
Directions:
On a lightly floured board, roll puff pastry into an 8 x 12-inch rectangle and transfer to a lightly sprayed or parchment-lined cookie sheet. Crimp a shallow rim all around the pastry. Place in fridge while making the filling.
Beat together cream cheese, egg, sugar and extract. Spread thinly on pastry. Rinse figs, pat dry and slice in half. Arrange evenly over the pastry. Bake pastry as directed on package.
Melt honey in a small pan. Five minutes before pastry is done, remove from oven and brush the figs with the honey to glaze. Return to oven for five minutes.
Cool pastry and cut into equal rectangles.
Good with espresso.
