Black Eye Peas Recipe

Serves/Makes: 6
Ingredients:
1 package (1 lb.) frozen black eye peas
2 cups water or broth (chicken or beef)
1 large onion chopped
1 clove of garlic smashed
1/4 cup Baco's (soy bacon tasting product ) or to taste
OR
a real meat bone, bacon or sausage- see recipe below
salt, black pepper to taste
soy sauce to taste
chopped parsley to garnish
Directions:
Place frozen peas in sauce pot with chopped onion, garlic, broth , Baco's and seasonings. Bring to boil then cover and simmer about 30 minutes or until beans are tender. Remove from heat covered and let beans absorb any excess liquid.
Note: typically a ham hock, bacon, sausage is simmered with the beans to add to the flavor. Turkey sausage is a good substitute for those who don't eat pork products. Omit any meat for vegetarian recipe.
