ingredients
1 medium onion, chopped
2 green chilies, deseeded and chopped
1 tablespoon home-made curry powder (optional)
vegetable stock to saute
6 ounces brown rice
1 can (15 ounce size) chopped tomatoes
2 cups water
2 1/2 cups zucchini, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cans (16 ounce size) flageolet or cannellini beans
1 can (11 ounce size) sweet corn
1/4 cup chopped fresh cilantro
directions
Saute onion, chilies and curry powder (if using) in vegetable stock (or use oil if you wish) until onion is softened.
Add the rice and canned tomatoes, along with water. Stir well, bring to a boil and simmer covered for 25 minutes, stirring occasionally.
Add the zucchini and peppers on top (don't stir them in yet). Cook for another 30 minutes, stirring 2 or 3 times.
Drain and rinse the beans and sweet corn, then stir into the pot and heat through gently for about 5 minutes. Stir in the coriander and serve.
