A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.


1 tablespoon extra virgin olive oil
1 package (10 ounce size) spinach leaves
1 1/2 teaspoon garlic salt
1/4 cup grated Parmesan cheese
Heat the olive oil in a large skillet over medium heat. Add the spinach to the skillet and cover. Allow to cook 5 minutes.
Stir in the garlic salt and cover again for another 5 minutes, then remove from heat.
Sprinkle with Parmesan cheese to serve.

This is one of those recipes that is almost *too* easy, but so tasty. A great side dish to accompany a variety of entrees
