ingredients

12 slices whole-wheat bread, dried out and cut into small cubes
1 quart reduced-fat chicken broth
1 teaspoon fines herbs
1 pound frozen spinach, thawed and drained
1 can (10.75 ounce size) low-fat cream of mushroom soup
1 soup can cold water
1 cup reduced-fat shredded cheddar cheese
1/2 cup reduced-fat grated Parmesan cheese
2 large eggs, beaten
1 small onion, peeled and minced finely
1 tablespoon minced garlic

directions

Preheat oven to 350 degrees F.

In a medium saucepan, bring chicken broth and fines herbs to a boil. Add in bread cubes. Remove from heat, cover, and let stand for 15 minutes until liquid is absorbed.

Mix in remaining ingredients until well combined.

Spray a casserole dish with cooking spray. Spoon mixture into prepared pan. Bake uncovered at 350 degrees F for 30-35 minutes.
