Lemon Cauliflower Couscous

ingredients
1 head cauliflower, cut into florets
1 green bell pepper, diced
1 tablespoon oil
2 shallots, chopped
1 tablespoon lemon zest
1 tablespoon lemon juice
directions
In a blender, pulse cauliflower for 2 minutes or until the size of cooked couscous.
In a skillet, cook bell pepper in oil for 4 minutes. Stir in shallots and cook 30 seconds more.
Add cauliflower and cook 5 minutes more. Stir in lemon zest and lemon juice.
