Baked Cauliflower and Cheese

2 tablespoons butter
1/2 head cauliflower, chopped and blanched
1/3 cup onions, chopped
1 cup heavy cream
2 cups Cheddar cheese, grated
Saute onion until tender.
Place cauliflower in bottom of baking dish. Combine onions with remaining ingredients. Pour over cauliflower.
Bake at 350 degrees F for 45 minutes.

Aug 9, 2010 Karen I loved this!! Next time I am going to try to mix several cheeses so that it is not all chedder, but this was a fabulous tasting way to stay low carb!!
