Ingredients:
1 tablespoon olive oil
1/3 cup finely chopped onion
1 cup uncooked long-grain white rice
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
OR
1/4 teaspoon crushed saffron threads
1/4 teaspoon cayenne pepper
1 can (14 1/2 ounces) chicken broth, regular or low-sodium
1/4 cup water
1 can (16 ounces) black beans, rinsed and drained

Directions:

In a medium saucepan, heat oil and sauté onion over medium heat, stirring often, until softened, about 5 minutes. Stir in rice, cumin, turmeric and cayenne. Toss for 1 minute to coat rice with oil. Add broth and water. Bring to a boil, cover pan and reduce heat to low.

Cook, tightly covered, for 10 minutes. Add beans, but do not stir into the rice. Recover the pan and cook until rice is tender and broth is absorbed, about 10 more minutes. Just before serving, gently stir beans into rice.
