Ingredients:
1 pound dried red beans
Water, as needed
6 bacon strips, diced
1 onion, chopped
1 green bell pepper, chopped
3 ribs celery, chopped
3 cloves garlic, chopped
1 can (15 oz. size) tomatoes, diced
2 bay leaves
1 1/2 teaspoon thyme
1 pound smoked sausage, diced
Cooked rice, as needed

Directions:

Rinse and sort the beans. Cover with water and place in the refrigerator 8 to 10 hours. When ready to cook, drain the beans and add fresh water. Bring the beans to a boil and let simmer for 1 hour.

In a skillet, saute the bacon. Add the onion, pepper and celery. To the beans, add the bacon/vegetables, garlic, tomatoes, bay leaves, and thyme. Simmer for another hour. Add the diced sausage. Smash a few beans to help thicken the mixture. Simmer a little longer or until the beans are done. When done, remove the bay leaves. Serve over steamed rice with hot sauce on the side.
