Beans n' Rice

INGREDIENTS:
1 teaspoon canola oil
1 onion, chopped
1 clove garlic, chopped
1 teaspoon chili powder
1/4 teaspoon celery seed
1/4 teaspoon freshly ground black pepper
1 can (19-ounce size) tomatoes
2 cups cooked red kidney beans
1 cup cooked brown (or white) long-grain rice
1 teaspoon Worcestershire sauce
1 green bell pepper, chopped
1/2 teaspoon salt
1/3 cup shredded cheddar cheese
Chopped fresh cilantro (or parsley)
DIRECTIONS:
In a large saucepan, heat oil over medium heat; cook onion and garlic, stirring occasionally, for 5 minutes or until onion is translucent.
Stir in chili powder, cumin, celery seed and pepper, cook for 1 minute. Add tomatoes, beans, rice and Worcestershire sauce; stir well.
Bring to a boil, reduce heat and simmer for about 20 minutes or until most of the liquid evaporates.
Stir in green pepper. Cook for about 2 minutes or until heated through. Season to taste with salt.
Garnish each serving with cheese and cilantro.

This recipe is really tasty and easy. It was so good I even served it to company. The only things I noticed is that they don't call for cumin in the ingredients but the instructions mention to add it so I put in 1 tsp and it was perfect.
