It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


Cooked couscous is combined with sauteed zucchini, yellow squash, red bell pepper, carrots, onion, garlic, and lots of flavorful spices.


2 tablespoons olive oil
1/2 cup diced zucchini
1/2 cup diced yellow squash
1/2 cup diced red bell pepper
1/2 cup peeled and thinly sliced carrots
1/2 chopped onion
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon curry powder
1/4 teaspoon crushed red pepper flakes
freshly ground black pepper, to taste
salt, to taste
3 cups cooked couscous
1/2 cup vegetable broth
1/4 cup chopped fresh parsley
Heat the oil in a large skillet over medium heat. Add the zucchini, yellow squash, bell pepper, carrots, onion, and garlic. Cook, stirring frequently, for 5 minutes.
Add the cumin, curry powder, crushed red pepper, salt, and pepper. Mix well and continue to cook, stirring occasionally, for 5 minutes.
Add the couscous and broth. Mix well then let simmer without stirring for 5 minutes or until the liquid is absorbed.
Stir the vegetable couscous with a fork, garnish with parsley, and serve immediately.

Haven't much been a fan of couscous in the past but enjoyed this recipe a lot. I think most of my trepidation with couscous has been the tiny pearls so I used the larger pearls which seems to be what was used in the photo of this recipe. I liked them a lot better. I could see adding shrimp or chicken to this recipe too to make it a full meal.

This is a very flavorful couscous recipe. Fresh veggies combined with the spices and a little rich vegetable broth are a great way to dress up couscous!
