Fried Rice For Two Recipe

Serves/Makes: 2
Ingredients:
1/2 tablespoon cooking oil
1 tablespoon sesame oil
1/8 cup peas
1/8 cup finely diced red pepper
1/4 cup bean sprouts
1/4 cup broccoli florets
1 cup cooked rice, chilled overnight
1 1/2 tablespoon soy sauce
Directions:
Place a medium skillet over medium heat on the stovetop. Add the oils, peas, pepper, sprouts and broccoli. Cook, stirring, for 1 minute.
Add the rice and soy sauce and cook, stirring for another 5 minutes. (Cover the skillet and add additional time if using frozen rice.)
Scoop rice into a serving dish and serve immediately.
