Mussels in White Wine Recipe

Ingredients:
1 cup white wine
1/4 cup minced shallots
2 garlic cloves,minced
1/2 cup parsley, chopped
2 pounds mussels,cleaned and debearded
2 tablespoons butter
Directions:
1. In large pot, bring wine, shallots, garlic and parsley to simmer. Simmer about 3 minutes. Increase heat to high. Add mussels and cook, covered, shaking pan several times, until mussels open, 4 to 8 minutes, depending on pot and mussel size. Remove mussels from liquid and transfer to 2 large serving plates or bowls.
2. Quickly swirl butter into pan liquid to make a slightly emulsified sauce. Pour sauce over mussels and serve immediately with crusty bread and chilled white wine.
