Lobster Newburg II Recipe

Ingredients:
2 pounds boiled lobster
1/4 cup unsalted butter (clarified)
2 tablespoons Sherry
1 pinch fresh grated nutmeg
1/8 teaspoon paprika
1/2 teaspoon table salt
1 pinch cayenne (optional)
1/3 cup Half & Half or cream
2 eggs, yolks only, slightly beaten
2 tablespoons brandy (for flaming if desired)
Directions:
Remove cooked lobster meat from shell and cut into slices. Melt butter, add lobster, and cook three minutes. Add seasonings and wine, cook one minute, then stir in cream and yolks of eggs (slightly beaten). Stir until thickened. Serve with toast triangles or with Puff Pastry Points. Serve in a chafing dish.
