Ceviche II Recipe

Serves/Makes: 8
Ingredients:
1 pound uncooked, shelled and deveined shrimp, scallops, sole and red snapper chunks
2 green onions, thinly sliced
8 cherry tomatoes, quartered
1/4 cup La Victoria Nacho Jalapenos
1/2 cup lime juice
1 teaspoon olive oil
1/2 cup La Victoria Salsa
1 tablespoon fresh cilantro
1/4 teaspoon dried oregano, crushed
Directions:
In a non-metal bowl, combine all ingredients. Cover and refrigerate overnight (the salsa and lime juice "cooks" the fish as it marinades). To serve, drain Ceviche and serve in small lettuce caps. Garnish with sliced avocado and lemon or lime wedges.
