Scallops are cooked with bacon, spices, and a hefty dose of hot sauce

8 slices bacon
vegetable oil
1/4 cup hot pepper sauce
2 tablespoons Dijon mustard
3 cloves garlic, minced
1 pound scallops, patted dry with a paper towel
1 teaspoon oregano
1 teaspoon chili powder
1/2 teaspoon basil
1/2 teaspoon thyme
1/2 teaspoon black pepper
salt, optional
Cook the bacon in a large skillet until crisp. Remove bacon leaving the grease in the pan. Set the bacon aside to drain on paper towels. When cool, crumble.
If the bacon grease is less than 1/3 cup, add additional vegetable oil to the pan and heat over medium heat.
Add the scallops, hot sauce, and spices to the pan and stir to coat the scallops. Stir gently for 2 minutes then add the bacon. Cook until scallops are opaque.
Serve hot over rice.
