Butter-Rubbed Chicken Recipe

Ingredients:
1 Free Range Chicken, 3 - 4 lbs.
1 teaspoon coarse sea salt (optional)
1 organic lemon
1 tablespoon organic butter
Directions:
Preheat oven to 500 degrees or higher if you can.
Rinse chicken inside and out with cold water. Dry with paper towels. Rub cavity with salt. Place lemon in cavity. Rub the chicken all over with the butter - think of it as a massage. Place chicken in a roasting pan and put in oven. Reduce heat to 300 or 325 degrees. Cook 20 minutes per pound, basting every 15-20 minutes. Don't overcook. This chicken is delicious and just as good the second day, if there are any leftovers.
