ingredients
3/4 pound lean pork, cut into 1/2" cubes
1/4 cup soy sauce, divided
1/4 cup water
2 tablespoons sugar
2 tablespoons lemon juice
2 teaspoons cornstarch
1/4 teaspoon dried crushed red pepper
2 tablespoons olive oil
1 small red bell pepper, cut into 1" pieces
1/2 small onion, cut into 1" pieces
2 cloves garlic, minced
1/4 cup chopped unsalted dry roasted peanuts
hot cooked rice
directions
Toss together pork and half the soy sauce. Set aside.
Stir together remaining soy sauce, the water, and next 4 ingredients.
Stir-fry pork in hot oil in a wok or skillet over medium high heat 3 minutes or until lightly browned. Add bell pepper, onion, and garlic.
Stir-fry 3 minutes or until vegetables are tender. Add soy sauce mixture and stir-fry 2 to 3 minutes or until thickened. Stir in chopped peanuts and serve over rice.
