Ingredients:
Neck bones Feet
Ears
Country Ribs
Roast

Directions:

Boil following meat in a good bit of water in a large pot until it is falling off bones.

Drain. Put liquid in refrigerator overnight to let grease form on top. Skim grease. Separate meat from bones. Grind meat.

Heat liquid adding chopped garlic, onion and green onion, bay leaf and parsley. Simmer. Can add thyme and hot pepper. Add Creole seasoning to taste. Add liquid to meat. Be sure you add all of the seasoning. Remember to remove bay leaf before adding meat. Pour into containers and refrigerate.
