Basic Game Sausages

INGREDIENTS:
2 pounds lean game meat, well trimmed
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 pound high-quality fatback
1/4 teaspoon ground cloves
1 1/2 tablespoon kosher salt
1/4 cup. good brandy or Cognac
1 1/2 tablespoon black pepper
sausage casings
DIRECTIONS:
Mix all ingredients together and grind in a meat grinder or a food processor, using short bursts. Stuff the mixture into casings using a sausage horn; or simply form into small patties.
