1 1/2 cup diced celery 1 1/4 cup chopped onion 3/4 cup chopped bell pepper 8 ounces tomato sauce 28 ounces whole tomatoes 1 clove garlic, minced 1 teaspoon salt 1/4 teaspoon black pepper 6 drops Tabasco sauce 1 pound shrimp, deveined and shelled
directions
Combine all ingredients except shrimp in crockpot.
Cover the crock pot and cook 3 to 4 hours on high or 6 to 8 hours on low.
During the last hour of cooking, stir in the shrimp.
When the shrimp is heated through, serve hot over cooked rice.

Since I cooked this on high I added the shrimp during the last 30 minutes, not the last hour. Was afraid it would get overcooked otherwise. Was quite good. Served it with rice and additional tabasco for those who wanted it.

If you use cooked shrimp you can just add it about 15-20 minutes before serving (just enough time to heat through). If your crock pot heats on the "hotter" side, turn it to low when you add the shrimp. I added a little creole seasoning in addition to the Tabasco.
