Potted Shrimp

ingredients
4 ounces butter
12 ounces peeled shrimp
1/2 teaspoon ground mace
1/2 teaspoon cayenne pepper
parsley for the garnish
directions
Melt the butter in a saucepan and add the shrimp, mace and the cayenne pepper. Stir the shrimp very gently and cook them over a low heat for 4-6 minutes. Add a little more cayenne if you prefer the heat but be careful not to over do it.
Pour the shrimp into ramekins or small pots and seal the tops with clarified melted butter. At this stage you could sprinkle over each pot a pinch of lightly chopped fresh parsley.
Leave to cool and refrigerate until required.
