ingredients
2 tablespoons butter
1 Spanish onion, chopped
12 raw jumbo shrimp, deveined
2 jiggers brandy
1 cup heavy cream
1 egg yolk
1 teaspoon parsley, chopped
1 dash cayenne pepper
1 dash salt
directions
In skillet, melt butter and saute onion until brown. Add shrimp to cook 10 minutes over medium heat. Add brandy and flame. Cook until flame goes out.
Blend together cream, egg yolk, parsley, and pepper. Add to shrimp. Stir well without letting sauce thicken. Add salt to taste. Serve hot with rice pilaf.
