ingredients
4 fillets firm white fish (such as swordfish, halibut, or cod)
salt and freshly ground black pepper, to taste
Oregano Sauce
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
2 teaspoons finely chopped fresh oregano leaves
salt and freshly ground black pepper, to taste
2 cloves garlic, finely chopped (optional)
directions
Season the fish generously with salt and pepper and grill over hot coals or under a preheated broiler until firm and opaque.
Combine the ingredients for the sauce in a bowl and whisk vigorously to make an emulsion. Spoon over the cooked fish and serve immediately.
