Ingredients:
4 whole snapper, about 11 ounces each, cleaned
4 cloves garlic, minced
8 mint leaves
7 teaspoons chopped parsley
salt and fresh ground black pepper to taste
2 tablespoons plain flour
1/4 cup extra virgin olive oil
2 tablespoons lemon juice

Directions:

Inside the belly of each snapper place 1 minced garlic clove, 2 mint leaves, 1 teaspoon of parsley and salt and pepper. Dust each fish with flour.

Place the fish in a heavy frying pan or on a barbecue hotplate over a medium heat, and baste each with 1 teaspoon of olive oil. Cook for 15 minutes if frying, or 10 minutes if using any other method. Turn and cook for another 10 or 15 minutes.

Mix together 3 teaspoons of oil, and 3 tablespoons of parsley with the lemon juice and salt to taste.

Transfer cooked fish onto serving plates and drizzle on this sauce. Accompany with steamed vegetables.
