Ingredients:
4 pounds Red Snapper
Salt and freshly ground pepper
6 tablespoons butter
1 small onion, chopped
4 cups stale breadcrumbs, fine
1 cup chopped English/Hothouse cucumber
2 teaspoons capers
3/4 teaspoon sage
1/2 cup white wine

Directions:

Preheat oven to 400 0F

Sprinkle fish inside with salt and pepper

In a skillet heat 4 tablespoons of the butter, add the onion and brown lightly. Add the crumbs, cucumber, capes, sage and half the wine and mix together. Stuff the fish with the mixture and close with skewers and string. Place the fish in a well-greased shallow pan lines with foil.

Bake uncovered until fish flakes easily, about 30 mins. Baste frequently with remaining butter and wine. Remove from pan and slice, pour pan drippings over fish. Accompany with grilled vegetables and fresh bread.
