Oven-Fried Pecan-Crusted Catfish

ingredients
1 tablespoon vegetable or olive oil
8 skinless catfish fillets, rinsed and patted dry
1 1/2 teaspoon Cajun seasoning
3 large egg whites
1 tablespoon Dijon mustard
1 cup crushed cornflakes
1/2 cup finely chopped toasted pecans
1/2 cup yellow cornmeal
1/4 cup Grape-Nuts cereal

directions
Preheat oven to 450 degrees F. Brush a rimmed baking sheet with oil.
Sprinkle Cajun seasoning on both sides of fillets.
In bowl, whisk together egg whites and mustard. In another bowl, mix cornflake crumbs, pecans, cornmeal and Grape-Nuts.
Dip each fillet in egg white mixture, then coat it with cereal mixture and place on baking sheet. Bake 15-20 minutes until golden brown on the outside and white and flaky in the middle.
Serve hot with tartar sauce.
