Walnut Crusted Halibut With Orange Salsa Recipe

Ingredients:
2 tablespoons flour
1/8 teaspoon each salt and cayenne pepper
1 egg white
2 teaspoons water
1 cup walnuts, toasted and chopped
4 halibut fillets
***Salsa***
3 oranges, cut in chunks
3 tablespoons red onion slivers
2 tablespoons chopped cilantro
1 jalapeno pepper, minced
1 teaspoon cider vinegar

Directions:

Heat oven to 450 degrees. Line a baking sheet with nonstick foil.

Mix flour, salt and pepper on a sheet of wax paper. Beat egg white and water in bowl. Spread walnuts on a sheet of wax paper.

Coat fish in flour mixture, dip in egg white mixture then press into walnuts to coat. Arrange on pan. Bake 10 minutes or until fish is done.

Stir salsa ingredients in bowl to combine. Serve with the fish on serving plates. Serve with steamed kale and couscous as side dishes.
