Broiled Halibut
INGREDIENTS:
2 pounds halibut steaks, cut in serving size pieces
1 tablespoon parsley, chopped
1/2 cup grated Cheddar cheese
1 cup chicken broth
1 teaspoon tarragon, or dill
1 egg white, beaten until foamy
DIRECTIONS:
Preheat oven to 400° F.
Arrange halibut pieces in an oven-safe dish. Pour in chicken broth; sprinkle fish with parsley and tarragon or dill.
Bake in preheated oven for 10 minutes; discard excess liquid.
Preheat broiler.
In a bowl, fold grated cheese into beaten egg white. Spread cheese mixture over halibut pieces. Broil until golden.
